Ricotta is absolutely having a moment right now, and I’m all for it. I love how it’s creamy and protein rich. It can be used in recipes that are hearty and recipes that are sweet.

Now, we are taking it a step further and whipping it. Enter the best ricotta toast ideas that are as simpe as they are delicious.


Turning creamy ricotta into an airy spread is a quick and easy way to make what looks and tastes like an elevated appetizer.

While you can throw just about anything on it, I’m loving these two simple ways that were inspired by a local restaurant. It’s so good that we order it every time we go!

What Is Whipped Ricotta and How to Make It 

Essentially, it’s taking the already well-loved ricotta and whipping it to change the texture.

Typically ricotta is thick and a little grainy, but when you beat it with a few ingredients, you can make it into a whole different experience of a light and smooth spread.

How to Make Whipped Ricotta Cheese 

Using a mixer (hand mixer or stand mixer), whip a cup of ricotta with a few simple ingredients. There are many different recipes out there. Loving to add a pop of citrus, I add a teaspoon of lemon zest, a pinch of salt, and a splash of heavy cream (about a tablespoon).

Let the mixer do its thing for about 2-3 minutes to break down any of the grainy ricotta texture while also incorporating some air into the mixture. Stop every minute to scrape down the sides. It will not get as airy as whipped cream, but it does create a soft, smooth ricotta spread.

Recipe for Whipped Ricotta (The Essential Base)

As described above, you only need three ingredients to make the whipped ricotta: ricotta cheese, lemon zest, and heavy cream. Salt can be added as an additional ingredient if you want.  It really couldn’t be any easier. Once you have the base made, the recipe can include anything you want. 

Ingredients

  • 1 cup whole milk ricotta cheese (drain the excess liquid first)
  • 1-2 tablespoons milk or cream to add to the texture
  • 1 teaspoon lemon zest to brighten the flavors

Now you have the perfect base for a plethora of ricotta toast recipes. My two favorites right now are below.


Option 1: Dessert for an Appetizer:Ricotta Toast Honey and Lemon

I swear, sometimes the basics are the best. This combination is so simple yet so fresh. It’s the first one to go when served, and it tastes a little like dessert.

This version highlights how simple, high-quality ingredients can create an indulgent experience.

  • The toast: a slice of toasted, crusty ciabatta bread 
  • The spread: a generous coating of freshly whipped ricotta
  • The toppings: a sprinkle of fresh lemon zest and a drizzle of honey

Option 2: The Little Kick Everyone Wants: Ricotta Toast with Hot Honey

Every time hot honey is listed as an ingredient on a menu, I order it. There’s something about the sweet and mild heat that works oh so well together. It works so well with whipped ricotta! The first two steps are the same as the first option.

  • The toast: a slice of toasted, crusty ciabatta bread 
  • The spread: a generous coating of freshly whipped ricotta
  • The toppings: a sprinkle of red pepper flakes and a drizzle of hot honey.

No matter which way you choose, whipped ricotta toast can go from a light snack for yourself to a quick but luxurious appetizer for your next party.
