No matter which you choose, the steps after this are so simple.
What are the ingredients of bruschetta chicken cutlets?
- Chicken (breaded or grilled)
- basil
- garlic
- tomato
- red onion
- olive oil
- balsamic glaze (Trader Joe’s has a tasty one)
- salt & pepper
How do you assemble your bruschetta chicken?
It’s ridiculously easy. After the chicken cutlets, all you need is a cutting board and knife! Take your basil and tomatoes and thoroughly wash and rinse them before you start cutting anything. Preparing this meal is much easier if you first set up your ingredients so that you only have to attend to the cutting board once.
Julienne your basil and place it in a bowl. Then, add your sliced tomatoes and onion. Finally, dice your garlic very small. While I’m a big fan of using jarred garlic when cooking, if I know the garlic isn’t getting cooked, fresh works best.
Place all your ingredients in a bowl and season with salt, pepper, and olive oil.

How do you plate your food?
If you love wowing your audience, plating this dish is a no-brainer! You can make it look semi-professional with very little effort. I always use white plates because I remember Ina Garten once sharing that food looks better on white plates because designs can be distracting to the food.
Using your fresh plate, place your chicken cutlets down. If you are giving two cutlets, stack them in a visually appealing way.
Top your chicken with the mixture that you made. Then, shave parmesan cheese over the top. The last step is to drizzle the balsamic glaze over the plate. I love the sweetness of the glaze, so I go a little nuts!
Bruschetta Chicken Cutlets
Ingredients
- 3/4 cup fresh basil, julienned
- 1/2 cup shaved parmesan
- 3/4 cup sliced cherry tomatoes or choose your preffered tomato and cut them up
- salt & pepper I prefer freshly ground pepper
- Olive oil, drizzled
- Balsamic glaze, drizzled
- 1/4 red onion, sliced very thin
- 1 tsp fresh garlic
Instructions
- If you must cook your chicken cutlets, do so now.
- Clean and dry your basil and tomatoes
- Julienne your basil, slice your tomatoes in half, thinly slice your red onion, and dice your garlic. Toss all of these ingredients in a bowl.
- Add salt, pepper, and olive oil and combine all of the ingredi with a spoon.
- Place your chicken cutlets on your plate, top with mixture, then shave parmesan over the top.
- Drizzle balsamic glaze over the top
